Mexican cuisine expert Jane Butel leads weekend cooking
school at The Fairmont Scottsdale Princess
Scottsdale, AZ, October 16, 2007 - One of America’s
foremost authorities on Mexican cuisine, Jane Butel of
the Santa Fe-based Jane Butel Southwestern Cooking
School, will bring her acclaimed cooking school to The
Fairmont Scottsdale Princess for an all-new program of
lessons in early 2008.
Recently named one of the nation’s top hotel cooking
schools by Gayot.com, the Jane Butel Satellite Cooking
School is presented at the resort’s La Hacienda
restaurant in partnership with the AAA Four Diamond
restaurant’s culinary team.
The cooking school weekends, slated for January 18-20,
2008 and March 7-9, 2008 begin with a welcome reception
and dinner on Friday evening. Saturday and Sunday
include continental breakfast, two six-hour cooking
sessions led by Jane Butel, and lunches created during
the sessions. Participants of The Jane Butel Satellite
Cooking School will enjoy luxurious accommodations at
the AAA Five Diamond Fairmont Scottsdale Princess.
In addition, each guest will receive a diploma, an
exclusive Jane Butel Cooking School apron, a copy of one
of Jane’s cookbooks, recipes for the foods that will be
prepared, and a catalog from Jane’s Pecos Valley Spice
Company. Cost for the weekend package is $1,650 per
person, subject to availability.
Jane Butel Satellite Cooking School participants will
learn to prepare a variety of regional Mexican
specialties such as Chiles en Nogada, a delicious chile
relleno with walnut sauce, Oaxacan moles, regional
tamales and Tres Leches Cake.

Butel, who has authored sixteen books on Southwestern
and Mexican cooking, and is the creator and host of the
widely syndicated PBS television show, "Jane Butel’s
Southwestern Kitchen," has simplified many complex
dishes so home cooks can create delicious Southwestern
meals using readily found ingredients.
Founded in 1983 in New Mexico, Jane Butel’s Southwestern
Cooking School has been recognized by Bon Appetit
magazine as one of the "Best Vacation Cooking Schools in
the World."
Recognized as one of only two Mexican restaurants to
garner the AAA Four-Diamond Award, La Hacienda
restaurant serves as the perfect backdrop for Jane’s
"Regional-Inspired" culinary program. La Hacienda
resembles a turn-of-the-century Mexican ranch house with
whitewashed stucco walls, low ceilings with dark beams,
wood-framed windows, fireplaces, Mexican folk art and
comfortable brocade chairs. To complete the atmosphere,
strolling mariachis serenade guests with romantic
ballads and traditional Mexican music. La Hacienda’s
authentic menu features such cuisine as Cochinillo Asado
--- spit-roasted suckling pig marinated in bitter orange
and tamarind and stuffed with chorizo sausage and pork
loin and traditional Capirotada --- a fried, three-milk
bread pudding with port-macerated berries served with
star anise ice cream.
Set against the backdrop of Arizona’s McDowell
Mountains, the AAA Five Diamond Fairmont Scottsdale
Princess reflects its Southwestern setting with Spanish
colonial-style architecture, expansive plazas and lush,
flower-filled gardens. The resort features 651 oversized
guest rooms with a private terrace or balcony, five
heated swimming pools, the luxurious 44,000 square-foot
Willow Stream Spa and championship golf at the adjacent
TPC of Scottsdale. For information or reservations,
