| El Casserole' This is a great crowd-pleaser or an easy family dinner.
1 cup cooked pinto beans
1 cup black beans
1 package fresh corn tortillas
salsa
1 can corn (drained)
1 cup grated cheddar cheese
1 small can chopped green chiles
1 bunch green chopped onions
1 small container sour cream
your favorite Mexican spices
1 lb ground beef (optional)
1 - 2 chopped tomatoes
Oil for frying tortillas
If using dry beans, start them early in the day and add your spices to the
beans to cook in the flavor.
Pour oil into skillet about 1/4 inch and slice tortillas into 2 - 3 inch strips.
Heat oil. Drop strips into oil and fry 30 - 60 seconds until crisp (these
make great chips too!) Remove from oil with drip spoon and place on paper towel
to drain. Use about 1/3 package. You will need enough chips to cover
the bottom of the casserole, and to cover the top. Line bottom of
casserole dish with fried chips.
If adding the beef, crumble and fry now until done. Drain.
Drain cooked or canned beans and pour into large mixing bowl; stir in 1/2 -
3/4 cup salsa, 1/2 container sour cream, spices if using canned beans, beef if
desired (save some crumbs for topping), 1/2 bunch chopped green onions, corn,
green chiles, 1/2 cup grated cheese. Spread mixture on top of chips in
casserole dish. Spread remaining sour cream over top. Cover top with
chips. Sprinkle with chopped tomatoes, meat crumbs if desired, remainder of
cheese and chopped onions. Bake at 350 for 20 minutes. Serves 6.
