Betty’s Fresh Apple Cake
From the kitchen of Betty B., Garland, Texas

Turn this lovely homemade apple cake into a fall centerpiece, birthday or Halloween cake.

 

3 cups flour
2 cups sugar
½ tsp. salt
½ tsp. soda
1 cup pecans
1 ¼ cup salad oil
1 tsp. vanilla
2 medium apples
3 eggs
1 tsp. cinnamon
½ tsp. nutmeg
½ tsp. cloves

Mix and sift flour, sugar, salt, soda & spices in a large bowl. In a small bowl, peel, core, cut apples in small chunks and add pecans. Add apples and pecan mixture to dry ingredients. Make hole in center, pour in beaten eggs, oil & vanilla and mix thoroughly. Bake in tube pan at 350 degrees for 1 ½ hours.
