Introducing Cask 63 American Eatery & Wine Bar

Spirited New Restaurant to Debut in January

SCOTTSDALE, Ariz (November 30, 2011) Jerry Tingle and Chef Brian Feirstein, the valley’s talented chef/general manager duo, are launching a vibrant new restaurant called Cask 63, American Eatery and Wine Bar. Comfortably contemporary space, eclectic American cuisine and a distinctive wine menu define the much-anticipated new eatery opening in Gainey Village in early January.

The story of how Cask 63 was named speaks to its wine bar pedigree as well as it being a true collaborative effort among two of the hottest restaurateurs in the Valley. Jerry Tingle is a name well known in the Valley as a master restaurateur and previously the general manager of Eddie V’s Prime Seafood restaurants and Wildfish Seafood Grille. Chef Brian Feirstein was the heralded Executive Chef for Eddie V’s and most recently The Capital Grille. “From the beginning, we both shared the vision of this being an inviting and not intimidating wine bar – the kind of place we would want to hang out with family and friends, sip good wine and enjoy great food,” said Tingle. “It takes 31 ½ gallons of wine to fill a cask, which is a generous amount that invites sharing. So we multiplied that number by two – a toast to us, two business partners who share the same vision.”

The Experience
Great pleasure awaits patrons of Cask 63 at the hands of Chef Feirstein. Known for dishes he created at Eddie V’s and most recently The Capital Grill, his new American cuisine respects the integrity of each food, encouraging unique, non-muddy flavors that stand on their own. Cask 63 will serve new American Cuisine with a seasonally changing menu to showcase fresh local ingredients. “I take pride in doing traditional American dishes extremely well. We will have an accessible menu with something for every palate. The kind of place you can eat at several nights a week and not tire of,” said Chef Feirstein.

New York Strip Pepper Steak, Goat Cheese Tortelli and Sea Bass of the Day are some of the dinner selections while lunch offers Cornmeal Oyster Po-Boy, Pear Salad and a Taco of the Day, to name but a few. The dessert that is sure to be on everyone's lips is the Crème Brulee Trio, featuring a Traditional Vanilla Bean and two changing brulees daily.

Cask will also be a popular meeting spot for local business meetings, shoppers, date nights and a regular gathering place for friends with moderately priced wines by the glass and inventive cocktails. Knowledgeable mixologists will offer boutique wines and the trendiest of cocktails. Wine flights will feature a variety of wines from all regions of the world and encompass both familiar and the latest varietals.

The Space
Cask 63 will occupy the space of the recently closed Bloom restaurant. Interior changes are now underway to create an energetic, modern yet cozy space. A mix of wood finishes, hues of steel blue, green and silver, and bright custom lighting create a sexy, and comfortably contemporary ambiance. Guests will feel a distinct sense of arrival at Cask 63 thanks to the lobby area's new curved wall sparkling with glass tiles in blues, greens and grays. A dramatic custom wine barrel made of stainless steel at the entrance features an iridescent “Cask” glowing in cool blue with a lighted “63” barrel.

The new bar area will be a great place to gather for a quick drink or linger with a date. Intimacy is created with a ceiling to floor sheer curtain that separates the bar from the dining room. The remodel includes a dramatic backlight bar made of a modern composite material speckled with recycled glass and stones that add sparkle with bits of blue and silver colors. Beautiful lighting and relaxed brown leather bar stools complete the refined look. Additional lounge seating will counterbalance the edgy concrete bar with a sophisticated softness.

The restaurant's banquette seating has been remodeled for more privacy. Dramatic back lighting and iridescent art panels have been added for a modern, edgy vibe. New carpeting with silver accents adds to the restaurant's cool shimmer and shine. Acoustics have been improved and the private event space has been upgraded. Outdoor seating has been extended and lush foliage has been added to enjoy al fresco dining for lunch or dinner.

Cask is a 6,500 sq. ft. restaurant that seats 250 people. The restaurant's private dining room seats 25 with private audio visual equipment and monitor screen. According to Tingle, “We were drawn to this great location in Scottsdale’s happening Gainey Village area and the great exposure on Scottsdale Rd. We've truly created a spot that people will want to return to again and again for its wide selection of wines and cocktails, cool space and consistently great food.”

Cask 63 is owned by partners Jerry Tingle and Chef Brian Feirstein and 4 S&P Investment Group. It is located at 8877 N. Scottsdale Rd. # 402 in Scottsdale, AZ 85253. The restaurant is open from 5:00 pm-9:00 p.m. Monday-Thursday; 5:00pm to 10:00 p.m. Friday and Saturday and 5:00 pm-9:00 pm on Sunday. Lunch is served from 11:00 am-3:00 Monday-Friday.
